Method :
1. Prepare the brine:
- In large pot, warm 4 cups water. Place into a bowl along with the kosher salt, brown sugar, black peppercorns garlic bay leaves and herbs. Continue stirring until the salt and sugar have dissolved completely. Remove from heat.
2. Cool the brine:
