Alice Springs Chicken is an Outback Steakhouse copycat recipe that gives you delicious chicken, crispy bacon and so much cheese at home. It is full of huge, bold flavors and starts with a grilled chicken breast which has been smothered in crispy bacon, melted cheese (Yeah!!), sautéed mushrooms. Topped with honey mustard glaze, it serves as a great comfort food dinner. It’s a total family meal winner for those who love all things cheesy chicken!


Ingredients :

  • 4 boneless, skinless chicken breasts
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 2 tablespoons mayonnaise
  • 2 teaspoons lemon juice
  • 1 cup sliced mushrooms
  • 8 slices bacon, cooked until crispy
  • 1 cup cheese shredded cheddar
  • 1 cup Monterey Jack cheese
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)
  • Chantilly Potatoes -Finely chopped parsley (to decorate)

Method :

1. Make the honey mustard sauce:

  • In a small bowl, combine Dijon mustard, honey, mayonnaise and lemon juice; whisk until smooth. Also reserve half of the sauce for serving and use other half to marinate chicken.

2. Marinate the chicken:

  • Meanwhile, put the chicken breasts in a resealable plastic bag or shallow dish. Add just enough honey mustard sauce to coat the chicken evenly (about a half of a recipes worth, if I had to guess). Refrigerate for at least 30 minutes or up to 2 hours, allowing the chicken time to marinate.

3. Cook the chicken:

  • Heat grill or skillet to medium heat. Drain the chicken from the marinade and throw away any remaining on it. Grill or sear the chicken on a griddle for 6-7 minutes per side, until fully cooked (165°F internal temp). Set the chicken aside.

4. Sauté the mushrooms:

  • Heat the olive oil in a small skillet, on medium heat. Stir in the sliced mushrooms and cook until browned, about 5 minutes. Add a pinch of salt and pepper to taste.

5. Assemble the chicken:

  • Preheat your oven to 350°F. Transfer the cooked chicken breast pieces into a baking dish Cover each piece of chicken with sautéed mushrooms, 2 pieces bacon and as much Monterey cheese cheddar jack shredded combination you use.

6. Bake and serve:

  • Bake in the oven for 10 to 15 minutes or until cheese is melted and bubbly. Drip on top of the sauced chicken and take then it out from oven. Season with parsley, serve.

  • For an additional taste, be dust finely cut smoked paprika or cayenne over the rooster earlier than grilling.
