On the hunt for a fast, nutritious and tasty recipe with seafood? Some of these creamy pastas already contain tons of vegetables, but you can add Artichoke and Parmesan Tilapia on the side! Top it off with a creamy artichoke topping and serve everyone in the department; you have yourself a fancy dish that still manages to be easy without being heavy.

Ingredients:

– 4 tilapia fillets

1 cup canned artichoke hearts, drained and chopped

– 1/2 cup mayonnaise

1/2 cup shredded Parmesan cheese

1/4 cup of breadcrumbs (for more crunch)

– 1 tbsp lemon juice

– 1 tsp garlic powder

* 1 tsp dried basil (or fresh and very finely chopped)

– Salt and pepper to taste

1 tbsp olive oil (for greasing the baking dish)

Instructions:

1. Heat the oven to 400 degrees. How to make Chicken Larb Lightly grease a baking dish with olive oil.

2. Instructions To Make an Artichoke Topping;

Mix together chopped artichokes, mayonnaise, Parmesan cheese, lemon juice garlic powder basil and a pinch of salt & pepper in a medium bowl. Add breadcrumbs (optional for texture)

3. Season the tilapia:

Season the tilapia fillets with a light layer of salt and pepper on both sides then place them in your prepped baking dish.

4. Top the fish:

Evenly distribute the artichoke and Parmesan mixture over top of tilapia fillets.

5. Bake:

Bake for 12-15 minutes, or until the fish can be flaked with a fork. If you prefer a more crispy top, place under the broiler for another 1–2 minutes or until golden brown.

6. Serve:

Serve with veggies, rice or salad and garnish lemon wedges or fresh herbs.

Tips:

– If you enjoy your food spicy, then add red pepper flakes to the artichoke mixture.

– For a different meal, this recipe would also work well with other white fish like cod or haddock.
