Ingredients:
8 oz lump crab meat (picked for shells)
– 1 cup heavy cream
– 3 egg yolks
~ 1/4 cup grated Parmesan Cheese
– 1 tbsp Dijon mustard
1 tsp lemon zest (grated fresh)
1 tbsp chives, finely chopped
– 1 clove garlic (minced)
1 tsp Old Bay seasoning (as liked as it is sucked)
– Salt and pepper to taste
2 tbsp sugar (for caramelizing)
Instructions:
1. Pre-heat your oven to 300°F (150°C). Boil water for a bain marie.
2. Prepare the custard:
Then in a bowl add in egg yolks, heavy cream, mustard, lemon zest as well asgarlic and season with Old Bay seasoning salt and pepper. Whisk in the Parmesan until melted.
3. Fold in lump crab meat and chives, being careful not to break up the crab.
4. Bake the pots: Pour into ramekins (ideally) or a baking dish so that the water comes halfway up their sides. Bake for 30–40 minutes, or until custard is set but the very middle moves a bit when you tap it.
5. Refrigerate the baked custard for a minimum of 2 hours.
6. Torch (or caramelize under broiler): Sprinkle sugar on top of each ramekin and gently torch to create a crispy caramelized topping.
7. Serve immediately and wait about a minute before the caramelizing sets in.
