Tired of the same old lunch? Try this flavor-packed cottage cheese salad to elevate your lunch with vibrant flavors and healthy ingredients!

Ingredients:

– 1 cup cottage cheese

– 1 diced cucumber

– 1 diced bell pepper

1 finely chopped red onion.

1 cup cherry tomatoes, halved

– 2 tablespoons olive oil

– 1 tablespoon lemon juice

– Salt and pepper to taste

1 tbsp fresh herbs (parsley or dill), chopped

Method:

1. Vegetables Combine: Dice cucumber, bell pepper and red onion into a large mixing bowl along with the halved cherry tomatoes.

2. Make Dressing: In an other bowl, whisk olive oil with lemon juice mixed up well; add salt and pepper. Pour this dressing upon the veg mixture.

3. Add Cottage Cheese: gently fold the cottage cheese and chopped fresh herbs into it.

4. CHILL AND SERVE : Refrigerate the prepared salad for at least 30 minutes before serving.
