Low Carb Chicken Alfredo:
Ingredients:
– 2 boneless skinless chicken breasts.
– 1 tablespoon olive oil
– Salt and pepper to taste
– 2 cups of fresh or frozen cauliflower florets
– 1 cup chicken broth
– 1 cup heavy cream
1 CUP PARMESAN CHEESE GRATED
– 3 cloves garlic (minced)
1 teaspoon Italian seasoning

– Fresh parsley (for garnish)
Instructions:
1. Cook the chicken:
Salt & Pepper Chicken breast Heat that olive oil in a skillet over medium heat. Place the chicken breasts on top and cook for around 6 to 7 minutes per side or until through. Take out from skillet let relax, and cut into prolonged pieces.
2. Make the Alfredo sauce:
– Then in the same skillet add minced garlic to it and sauté till fragrant, some 30 seconds. Stir in cauliflower florets and chicken broth then add to a simmer. Place over medium-high heat and cook until cauliflower is tender, 5–7 minutes.
3. Blend the sauce:
When the cauliflower has finished roasting (it is fork tender) transfer it to your blender or use an immersion hand held. Pour in the heavy cream, parmesan cheese, Italian seasoning and nutmeg (if using) and purée until creamy. If sauce is too thick then you can add more chicken broth or cream to your own thickness.
4. Combine:
– Add the sauce back into the skillet or frying pan and heat over low. Fold in the sliced chicken with sauce. Cover and allow to simmer for a few minutes or until heated through.
5. Serve:
Top with fresh parsley and serve HOT! Great served with steamed veg or zoodles to keep it super low carb!
Tips:
* Add some sautéed spinach or mushrooms for extra taste profile.
The sauce can be thinned out by pouring in more or less chicken broth.
