Ingredients :

  • 1 lb Velveeta cheese (cubed)
  • 1 can {10 ounces} Rotel diced tomatoes with green chilies
  • 1/2 lb of meat (ground beef or sausage, optional)

Method :

1. Brown the meat (optional):

  • brown some ground beef or sausage in a skillet over medium heat Drain any excess fat ad set aside.

2. Melt the cheese:

  • In a medium saucepan, add cubed Velveeta cheese and can of Rotel tomatoes. Simmer over low-medium heat until the cheese is completely melted and smooth, stirring often.

3. Add the meat:

  • Browned ground beef or sausage — For a heartier dip, add browned ground beef or sausage to the melted cheese and tomato mixture.

4. Serve warm:

  • Transfer the dip to a serving bowl and snack away with tortilla chips, crackers or fresh veggies.
