Vegan Starbucks Banana Bread Recipe:

Ingredients:

– 3 ripe bananas (mashed)

1/2 cup vegetable or coconut oil, melted

– 1/2 cup brown sugar

1/4 cup almond, oat or soy milk

– 1 tsp vanilla extract

1 3/4 c. all-purpose flour

– 1 tsp baking soda

– 1/2 tsp salt

– 1/2 tsp cinnamon (optional)

– 1/2 cup chopped walnuts or pecans

1/2 cup vegan chocolate chips (optional)

Instructions:

1. Bake the cookies in oven at 350 Fahrenheit (175 Celsius). Lightly grease a 9×5-inch loaf pan (or line it with parchment paper.)

2. Mix the wet ingredients:

In a bowl, smash your bananas until smooth. Spoon in the melted coconut oil (or vegetable oil,) brown sugar, plant-based milk, and vanilla extract until combined.

3. Mix the dry ingredients:

In a small bowl, combine the flour, baking soda and salt (and cinnamon if using).

4. Combine:

Add the dry ingredients to the wet and mix until blended. Be careful not to overmix. Stir in chopped walnuts, pecans or vegan chocolate chips.

5. Bake:

Then, pour the batter into your prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.

6. Cool and serve:

Cool the banana bread in the pan for about 10 minutes, then run a small knife around it and invert on to wire rack to finish cooling before slicing.

Tips:

For ripe bananas: Place in oven at 300°F (150°C) for roughly ten to fifteen minutes, or just until the skins turn black and begins to soften.

Sprinkle over extra walnuts or chocolate chips.
