Ingredients:4 large russet potatoes, washed and dried4 tablespoons olive oil1.5 tablespoons sea salt2 lbs steak (NY strip, ribeye, sirloin, or tenderloin)2 teaspoons kosher salt2 tablespoons minced garlic (about 8-10 cloves)6 tablespoons softened butter2 tablespoons Cajun seasoning (preferably low sodium)4 tablespoons avocado oil, divided1 ½ cups heavy cream⅔ cup grated Parmesan cheese2 tablespoons fresh parsley, finely choppedJuice of 2 lemon wedges½ – 1 teaspoon red pepper flakes1 teaspoon freshly ground black pepperInstructions:Preparing the Potatoes:1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.2. Coat the potatoes with olive oil and sprinkle sea salt evenly over them. Place them on the prepared baking sheet.3. Bake for 50-60 minutes, or until they are fork-tender.Preparing the Steak:1. Trim any excess fat from the steak and cut it into 2-inch cubes.2. Drizzle 2 tablespoons of avocado oil over the steak pieces and generously season with Cajun seasoning.Cooking the Steak:1. Heat 2 tablespoons of avocado oil in a skillet over medium-high heat.2. Sear the steak for about 2 minutes without stirring, until a golden crust forms. Flip and cook for another minute, then reduce the heat to low and cook for one more minute.Adding Garlic Butter:1. Move the steak to one side of the pan. Add 2 tablespoons of butter and 1 tablespoon of minced garlic to the empty side. Sauté until fragrant.2. Toss the steak in the garlic butter and cook for another minute. Remove from the pan and tent with foil to keep warm.Making the Parmesan Cream Sauce:1. In the same skillet, add 2 more tablespoons of butter and the remaining minced garlic. Sauté until aromatic.2. Slowly pour in the heavy cream, whisking continuously, and bring to a gentle simmer. Let it reduce for 3-5 minutes.3. Stir in the red pepper flakes and Parmesan cheese, whisking until the sauce thickens. Adjust salt and pepper to taste.4. Remove from heat and mix in the parsley and lemon juice.Finishing the Potatoes:1. Lift and drop each baked potato onto a hard surface to fluff the inside.2.
