Ingredients :
- 16 oz elbow macaroni

Method :
1. Cook the pasta:
- In a large pot bring water to boil; add some salt. Bring to boil and then add elbow macaroni, cooking according to packet directions until al dente. Drain and set aside.
2. Make the cheese sauce:
- Melt the butter in a medium saucepan over medium heat. Add the flour and whisk to form a roux; cook for 1-2 minutes. Slowly whisk in the milk and heavy cream, stirring constantly to avoid any lumps. Stir well continuously & cook for 3-4 minutes or until the curry sauce becomes thick.
3. Add the cheese:
- Reduce heat and gradually stir in sharp cheddar, Parmesan, and Romano cheeses until fully melted smooth. Salt, pepper, garlic powder and paprika (optional)
4. Combine pasta and sauce:
- Put the cooked macaroni into the cheese sauce and stir them well so that all of it gets coated nicely. Spoon the mac and cheese into an ovenproof dish.
5. Bake the mac and cheese:
- Bake mac and cheese in the oven at 350 F for ~15–20 minutes, or until it starts getting bubbly and slightly golden on top.
6. Serve:
- Bake in the preheated oven until mac and cheese is bubbling, about 15 minutes. Remove from oven; let stand a few min before serving. Top with more shredded cheddar if desired for extra cheesiness.
